Kids Prefer Veggies Not Too Raw, Not Too Cooked

Kids prefer broccoli and cauliflower when the vegetables are cooked for 6 to 8 minutes.
Bill Palladino - MLUI's insight:

Why should kids be any different than us?  I'm pretty picky about how long my broccoli cooks.  Bright green with a bit of crispiness or else it goes in the soup.

How America Became a Food Truck Nation

How America Became a Food Truck Nation | Local Food Systems | Scoop.it
Our new food columnist traces the food truck revolution back to its Los Angeles roots
Bill Palladino - MLUI's insight:

These things are rolling symbols of edible diversity, urging citizenry to stop and try something different in the moment. Like that fleeting kiss from your college sweetheart, they leave you to ponder if you'll ever taste such sweet, simple, unburdened and unbridled temptation again.

For those of you tuning in from afar, we've got a hot debate going on in my home town about allowing food trucks to clog our downtown streets with goodness... or not.  It's madness frankly.  I love food trucks and appreciate what they represent. I'm neither afraid or threatened by what they may bring to this community.

Food for Thought: Is salt good or bad? - The National

Food for Thought: Is salt good or bad? - The National | Local Food Systems | Scoop.it

Table salt is heavily processed and has toxic additives. But what about sea salt? (RT @LifeNationalUAE: Salt? Bad for you or not? We clear the confusion for you once and for all.

Bill Palladino - MLUI's insight:

Salt is one of those things I've always taken for granted. It's there on the table. We in fact have three types of salt available.  One that's sea salt, one that's flavored with bourbon (I know, sounds so elitist), and one that's this fancy pink stuff from Hawaii. We're careful about quantity, but it's not something we've considered much from a quality point of view.

Pink Bumble Bee Cherry Tomato - Artisan Seeds

Pink Bumble Bee Cherry Tomato - Artisan Seeds | Local Food Systems | Scoop.it

Pink Bumble Bee was bred by Artisan Seeds.

It is a cherry tomato with a bright, sweet flavor and beautiful yellow striping over deep pink flesh.  The plants are vigorous vines, with somewhat wispy leaves, and they produce continuously over long growing seasons.

Fruits are relatively resistant to cracking and the plants perform well under both cool night-time temperatures and high daytime temperatures.  Well-suited to greenhouse growing.

Bill Palladino - MLUI's insight:

If these taste as good as they look, I'm in.

In The Kitchen with the Cookbook Series : News : The Ticker | Local Food Systems | Scoop.it

“Be careful with these peppers – they're spicy.”

Dave Denison, owner of Amical, is handing out small bowls of hot peppers to a group of 18 staff members gathered at his downtown Traverse City restaurant on a Monday afternoon. He has convened his employees together for Cookbook Dinner Series “school” – a 90-minute training session held the first Monday of every month from November to May. Later that evening, the staff will roll out a brand new menu to be offered for one week only, highlighting recipes from a featured ethnic cookbook selected by Denison.

Bill Palladino - MLUI's insight:

Nice article by Beth Milligan about one of my favorite spots in TC. Dave Denison was an occasional guest chef when I owned my restaurant. Once he left a perfect impression of his hand, in dark chocolate, on the white walls of the kitchen. This man knows restaurants and food.
