It all depends on what the boats have caught at night: it’s the fish that, time after time, inspires the cooking, from the fried paranza to the different types of Adriatic fish. So, it is the style with which different flavors are matched and cooked that characterizes the dishes. Pasta and bread, in their various shapes, are all rigorously home-made. Restaurant Emilio cooks strictly fresh fish from the Adriatic Sea that has extraordinary taste features.
Emilio stocks up from the boats that go fishing every day and that are the heiresses of the old lancette and paranze, namely the sail boats that were used until the beginning of last century. The fish caught changes every day, therefore the dishes depend on it.
The Restaurant Emilio is particularly careful as for the choice of wines from the territory. Le Marche, provide the restaurant with wines of a very high quality. Think of Verdicchio, international grapevine, today proposed in “brut” version, which is a true discovery for the most refined palates, not at all inferior to any “sparkling” wine.

Also this year, in Le Marche, restaurant operators and gourmands have been eagerly awaiting the publication of The Michelin Guide. The annual guide book published by the French company Michelin for more than one hundred years, better known as The Michelin Red Guide, represents the oldest and best-known European hotel and restaurant reference guide. The guide awards Michelin stars for excellence to a select few establishments and the acquisition or loss of a star can have dramatic effects on the success of a restaurant. This is the reason why the starred restaurant owners and few good candidates anxiously awaited the publishing.
Actually the edition 2014 of the guide only confirms what reported in 2013:

In all central Italy is common, in many restaurants, to use a roaring fireplace to grill steaks, chops, chicken, sausages and these simple rib lamb chops, bathed with an olive oil and garlic marinade brushed onto them with rosemary branches.
