Le Marche and Food
Discover Le Marche rich cuisine, great traditional and tasty food in between the coast and the mountain. A cuisine made by excellent products GMO-free, mostly organic or from sustainable techniques, supplied daily by skilled farmers, fishermen and harvesters: from tender shrimp to Conero muscles and from the white truffles of Acqualagna to ascolana olives stuffed with meat or fish, one of the most popular of the ascolana-style fried dishes.

Here in order of Rank the list of the Best Le Marche Restaurants by "La Guida Dei Ristoranti d'Italia 2014" l'Espresso:
Le Marche is an excellent culinary example of cross-pollination. Rich pasta dishes such as Vincigrassi, a kind of lasagne made with chicken liver ragù and black truffles; and another dish called Passatelli. Potacchio, a spicy stew of rabbit or lamb (or even monkfish), or the simple charcoal-grilled meats that appear on every trattoria menu. Soft salami made in Fabriano, the excellent dried pasta made
As in all of the Italian penninsula, the more local you eat, the more art you can find. Here in Le Marche, the cuisine is quite different in the micro-regional sense, particularly between the more experimental and modern touches apparent in the coastal cuisine versus the neoclassical cooking of the interior Apennines. My “faves” start on the southern coast, where several towns house nearly all of the great restaurants.[...]
The Chef Danilo Brei of the Restaurant Emilio, doesn’t offer pre-packed recipes.
It all depends on what the boats have caught at night: it’s the fish that, time after time, inspires the cooking, from the fried paranza to the different types of Adriatic fish. So, it is the style with which different flavors are matched and cooked that characterizes the dishes. Pasta and bread, in their various shapes, are all rigorously home-made. Restaurant Emilio cooks strictly fresh fish from the Adriatic Sea that has extraordinary taste features.
Emilio stocks up from the boats that go fishing every day and that are the heiresses of the old lancette and paranze, namely the sail boats that were used until the beginning of last century. The fish caught changes every day, therefore the dishes depend on it.
The Restaurant Emilio is particularly careful as for the choice of wines from the territory. Le Marche, provide the restaurant with wines of a very high quality. Think of Verdicchio, international grapevine, today proposed in “brut” version, which is a true discovery for the most refined palates, not at all inferior to any “sparkling” wine.
The cellar of the restaurant offers a variety of the best national and international wines, including bottles of high prestige.

In all central Italy is common, in many restaurants, to use a roaring fireplace to grill steaks, chops, chicken, sausages and these simple rib lamb chops, bathed with an olive oil and garlic marinade brushed onto them with rosemary branches. The crisp, brown chops are best when eaten sizzling hot off the fire, so the Italians call them scottadito, meaning "burned fingers."
