Down at a curiously named village called Moresco, there is quite big shop run by Ciriaci family, who produce hams (Prosciutto di Norcia IGP), sausages, lonza, salame Marchigiano, a superb spreadable salami called Ciauscolo (IGP), the exquisite guanciale, or pig's jowl to make a really authentic spaghetti all'amatriciana.
