Cured salmon

Cured salmon | Latvian cuisine | Scoop.it
Salt-cured salmon (mazsālīts lasis) has been a delicacy for a while - it was served to upper classes and was highly regarded in the Late Middle Ages, while in early 20th century sugar was added to the recipe, making cured salmon a popular party treat. When I was growing up, cured salmon sandwiches was an…

Gingerbread

Gingerbread | Latvian cuisine | Scoop.it
Christmas in Latvia cannot be imagined without baking tray upon tray of gingerbread (piparkūkas). It is a national pastime in the days leading up to Christmas - store brought gingerbread just won't do. However, majority will be happy to use store-brought gingerbread dough and every self respecting bakery and supermarket will have it for sale.…

Meatball soup

Meatball soup | Latvian cuisine | Scoop.it
Let's talk soup. Without much exaggeration, Australians only eat pumpkin or pea & ham soup, only in winter and usually both are blended to the consistency of baby food. Latvians, on the other hand, would have tens of soup varieties, eaten all year round and with chunky meat and vegetables in them. When I was…

Yeast pancakes with mixed berry jam and sour cream used to be (and probably still are) dessert staple in Latvian schools. They are more time consuming to make, but the thick, wholesome and bread like treats are well worth it. [amd-zlrecipe-recipe:19]

Marinated pumpkin

Marinated pumpkin | Latvian cuisine | Scoop.it
Latvians are in to preserving things. Fruit, vegetables, berries, mushrooms - you name it, we preserve it.  It all relates to winter - it is (literally) freezing cold for 6-7 months of the year and the opportunity to grow and eat fresh produce is quite limited. Plum cake

Plum cake | Latvian cuisine | Scoop.it
This is a quick and easy cake that everyone will love - it is light and moist and perfect with a cup of tea. This is a spin-off of an apple cake (ābolmaize) but I have found the tartness of plums to work better with the sweetness of the pastry. [amd-zlrecipe-recipe:4]
