Graydon Gunthardt's insight:

This article made a lot of sense to me. Eating  more fruits and vegetables can be hard for some because many people do not want to take the time to prepare something before they eat it. For example, if someone wanted a salad, they might not want to chop lettuce, carrots, onions, and peppers, so they will just settle for a potato chip salad instead. This article suggested taking the time to chop produce in bulk so you can have it at the ready when you want it. It also suggested using packaged leafy greens instead of chopping lettuce for a salad, which I find would be a lot simpler! I think it is a good idea to take some time and prepare everything before I am in hunger mode and just want to eat whatever is easy for me to prepare.
