It's believed that an apple a day will keep the doctor away, but now researchers know why. A group of 16 healthy volunteers who ate an apple a day for 4 weeks had a 40% reduction in oxidized LDL compared with 18 people who took two placebo capsules per day supposedly containing apple polyphenol extract. A third group of 17 volunteers who consumed two capsules of apple polyphenol extract per day for 4 weeks registered a measurable effect regarding oxidized LDL, but not as strong as the effect among those who ate actual apples.
