Ingredients:Tofu – 250 gmSpinach – ½ kgCumin seeds – ½ tspGarlic, chopped – ½ tspBoiled Onion Paste: ¾ cupTomatoes, chopped: TwoSalt – To TasteFresh cream - Four tablespoonSoy refined oil – For deep fryingGaram masala – ½ tablespoonMethodCut tofu into 1 inch cubes and deep fry in oil slightly. Do not make the cubes crisp. Keep them aside. Remove stems from spinach, clean and wash it. Chop the cleaned spinach and blanch for 2-3 minutes in salted boiling water. Cool and grind it to a fine paste.  Heat two tablespoon oil in a pan, add cumin seeds, chopped garlic and stir till garlic turns golden brown. Add onion paste, chopped tomatoes and cook for three to four minutes Add spinach paste and salt and stir the mixture. Cook till the gravy comes to a boil. Cook on low flame till tofu becomes soft. Ingredients•Carrots                           1 small•Zucchini                          ½ small•Potatoes                        ½ small•Cauliflower                    2-3•Green peas, blanched   1/4 cup•Spinach, chopped          2-3 leaves•Oil                                    1 tablespoon•Onion, sliced                    ½ small•Celery, chopped             1 inch stick•Refined flour (maida)    1 tablespoons•Vegetable stock             1 cup•Salt                                   to taste•Black peppercorns, crushed      to taste•Milk                                                1/4 cupMethodCut carrots and zucchini into half inch pieces. Heat oil in a deep pan.Add onions and sauté till translucent. Add celery and continue to sauté for a minute. Add potatoes, carrots, zucchini and cauliflower and stir.Add refined flour and stir. Add vegetable stock and salt and cook for five to ten minutes or till the vegetables are done.Add crushed black peppercorns, green peas, spinach and mix. Add milk and let the mixture come to boil.Serve hot with garlic bread.

In a pan, dry roast the rava optional-semolina for a couple of minutes and set aside.2. Add water to the pan. Bring it to a boil. Simmer it and add the rava. Give it a stir.3. Cook till all the water is absorbed and rava is cooked.4. Mix in the milk/soy milk and cardamom. Commercial soy milk is sweetened. You can add a little sugar if needed to taste.5. Serve topped with some raisins.

Chick peas are considered as one of the most nutritious beans for the right reasons. It is rich in folic acid, proteins and dietary iron. Throw in some curd and this tangy salad becomes even richer in calcium and proteins. Mint and coriander increase the content of Vitamin A. Serve it chilled and relish this delicious salad.Ingredients1 cup drained and boiled kabuli chana (white chick peas)½ cup tomato cubes½ cup cucumber cubes1/4 cup chopped spring onion greens and whitesSalt to tasteFor The Mint Dressing1/4 cup chopped mint leaves1/4 cup chopped coriander1/2 tsp sugar2 tbsp low-fat curdsSalt and freshly ground black pepper to tasteMethod For the dressingCombine all the ingredients and blend into a smooth purée in a blender. Refrigerate.For the saladDrain and wash the soaked chick peas. Add fresh water and salt and pressure cook the chick peas for 3 to 4 whistles till they are soft. Cool completely.Combine the boiled chick peas with the remaining ingredients. Add the dressing and mix well. Serve chilled.

Add an egg, a pinch of salt and knead into dough with the help of milk and water. Keep aside for some time.Heat a tawa, smear with little oil and clear it with a clean cloth to smoothen the tawa.Cook chapatti over low to moderate heat on both sides.For fillingHeat the pan and add one tablespoon oil.
