With gnocchi, you have to be able to feel the consistency of the dough rather than rely on exact quantities. Different varieties of potato – and even different potatoes in the same box – will absorb different amounts of water and change the amount of flour you need – so it’s impossible to be precise. Naturally, most Italians would have learnt this visceral skill through years of languorous Sunday mornings with Nonna.

Ingredients for 4 people

Sweet dreams are made of this... Baked spiced figs with creamy vanilla panna cotta is utterly decadent and gorgeous on the plate! During an unseasonably late fig season, we are celebrating with wild green figs from our neighbors tree. I love figs with pecorino cheese and honey, but now that our neighbor Caroline taught us this recipe its a new favorite! A beautiful finish for your late summer, early-fall dinner.

Recipe for Panna Cotta with Baked Spiced Figs

Baked Spiced Figs:

12 small figs1 vanilla sticka pinch nutmega pinch cinnamon60-75gr. Sugarbutter

Preheat your oven up to 200C.

Butter an oven tin.
Cut the figs in half and place them face up and close together in the buttered tin.
Open the vanilla stick and take the pods out, drizzle the pods, cinnamon and nutmeg over the figs.
Bake in the oven for 15minutes, lower the temperature to 160 C., drizzle the sugar over the figs and keep in the oven for another 15minutes. Let them caramelize.

Vanilla Panna Cotta
serves 8

Ingredients for Panna Cotta3 sheets of gelatinscant 1/2 cup milk or 120 ml2 cups or 500 ml heavy cream1/2 cup or 60 g sugar1 vanilla bean, slit lengthwiseDirections

The Marche is a region on Italy’s eastern, Adriatic coast, known for this pasta dish, which differs significantly from the usual lasagne we are all so familiar with. Vincisgrassi doesn’t have a tomato sauce or include minced beef, instead combining chicken giblets with a thick bechemel sauce. My recent attempt at this regional speciality broke with tradition somewhat, because I couldn’t get hold of one of the core ingredients, the giblets. Supermarkets don’t seem to sell these separately from whole chickens and even then rarely. I used two small skinless (free range) chicken thighs, diced, and two lamb kidneys, also diced, instead, in an attempt to recreate the depth of flavour that the giblets would give the dish. This substitution worked really well, although I would still like to make this lasagne using the proper ingredients. Vincisgrassi is a luxurious version of lasagne, the tanginess of a tomato sauce replaced with the rich, delicious flavours of dried porcini mushrooms and offal. This recipe comes from the wonderful book Italy: the country and its cuisine.

Vincisgrassi

100g salted butter, 100 cubed pancetta, 1 medium onion (diced), 1 carrot (diced), 1 celery stick (diced; my addition), 300g chicken giblets (or suitable substitution), 50ml white wine, 1 tbsp tomato puree, 100ml stock, 1/4 tsp cinnamon, 20g dried ceps, 125ml milk, 400ml bechemel sauce,a box of lasagne sheets, 75g grated parmesan.
