Found in Italy’s Piedmont, Marche and Tuscany regions, growing among the roots of poplar, beech, hazelnut, oak and willow trees, is the rare European white truffle. This, the world’s most expensive mushroom, has a price tag that can exceed $2700 per pound. White truffles are very aromatic, with a strong flavor that can be described as earthy, musky or garlicky. Light brown or yellowish in color and smooth in texture, they are usually shaved raw over a dish.

Italy is packed with wonderful truffle fairs and festivals in October and November. Long-term festivals and markets take place in Alba in the Piedmont region, in Acqualagna in Marche and in San Miniato in Tuscany.

In Le Marche, Acqualagna, the town that calls itself the “truffle capital” holds a white truffle fair on weekends starting at the end of October through mid-November. In fact, Acqualagna is the only territory that has fresh truffles of all kinds, all year long. [...]

Did you know that even people who eat animal products can wake up their tastebuds to healthier eating when they pile on the plant based real whole foods? The #1 question asked of almost every person who eats only plant food is "where do you get your protein"?. The question for "meat eaters" is "where do you get your fiber"?

 

You already know the answer to where vegans get their protein if you've been following this site for awhile now. Plant based foods are rich in amino acids, the building blocks of protein which are found in plant based foods. Yes, meat, eggs, and dairy all contain protein, but the protein from plants is easier for your body to break down and use for its nutritional needs. Are you aware that spinach supplies more protein, per pound than ground beef?

 

Fiber comes from you guessed it; plant based foods, greens, veggies, and fruits. These foods are so delicious, you won't even notice the fiber, but your body will love the cleansing treatment.

 

Health tips:  Today there's a wonderful variety of plant based real whole foods that can be swapped for dairy and eggs. In place of mayonnaise, there's Veganaise and Just Mayo or you can also use tahini from sesame seeds as in everyone's favorite Hummus (high in protein too).

 

In place of yogurt, cheese, and/or cream from dairy, swap out cashews soaked in filtered water, drained as the go to creamy plant based ingredient. Avocado also is another go to swap out ingredient for creamy dishes. Cashew cheese is easy to prepare and tastes divine on your favorite salads, lasagna, and/or pizza dishes. can also be used a s a dip with cut up veggies. You can also make hemp cheese.

 

What to do in place of eggs, use chickpeas and the liquid in the cans. Amazing but true. Plus there's a new no egg product on the market. Also tried and true swaps use flaxseeds or chia seeds and water. Or bananas or applesauce work also.

 

And of course, there's numerous plant based foods which can be substituted for meats such as beans, lentils, and split peas. There's also store bought products if that appeals to you. Adding nutritional yeast to your soups, salads, plant based cheese adds a zesty cheesy flavor and loads of protein. Add plant based real whole protein/fiber rich foods to your meals once a week or every day. Your body will thank you.

 

Don't forget nut butters, high in plant based protein. Making your own is fun and you control how much or how little sugar/salt is added.  Also you can make your own nut milks and raw plant based desserts made with nuts, raisins, hemp protein powder and coconut flour, both high in protein. Yummy and so simple to make, a child can do it.

Affogato al Caffè

Ingredients

200ml strong espresso coffee4 scoops good-quality vanilla ice cream

Instructions

Make the espresso coffee, enough for 4 little after-dinner coffee cups.Put the ice cream into 4 dessert glasses or cups.Drown each glass with coffee and serve while warm and melting.To make it even more indulgent add a few pieces of plain chocolate in the hot coffee before pouring over the ice cream. Serve immediately!
