Food in conceptual art seeks to connect the visual with the cerebral and the visceral, says Indonesian contemporary Julian Abraham, who is working on the concept of fermentation, wine, prohibition and faith with installations.

35 of the city's ethnic and community groups were involved in Eating the City. Groups were assigned one of the 20 sections into which the map of Melbourne was divided, which they were responsible for interpreting with their own cuisine. The sections of the map were assembled atop tables specially designed by Bárbara Ortíz

 

Ali&Cia, with the help of Australian food consultant Gay Bilson, coordinated with all the communities, holding workshops to decide which traditional ingredients and dishes would be used to build all the urban elements of the part of the city centre of Melbourne they had been assigned.

Ali&Cia's Urbanophagy Ceremonies are a form of public performance art or interactive community theatre that entail the creation of an edible scale model of a locality by its inhabitants. Community members draw on their culinary traditions to interpret a part of the map, adopting an urbanophagic gaze in the search for poetic and metaphorical connections. Beyond simply representing the integration of a city's different social groups, Urbanophagy Ceremonies enact this integration and claim the city for all of its citizens.

 

Alicia Ríos and Barbara Ortiz first developed the idea in 2003, in response to a commission by the City of Melbourne to create a work involving food and communities to celebrate the inauguration of Federation Square, the city's new public space and icon.
