1 lb. chicken sausages in casing. GO SPICY if u dare.

3 cloves garlic, minced
1½ teaspoons ground oregano
½ teaspoon salt

28 ounces chicken broth
1 lb. small pasta – I used orchiette
8 ounces fresh baby spinach

However we don't have an icecream machine and in our house, homemade semifreddo is just as good - plus any dessert that doesn't need the oven on is an added bonus!  Semifreddo literally translates to semi-cold or in this case, semi-frozen and let me tell you, trying to take a few photos on a hot June day with temps in the 90's F/30's C was more than difficult! As many cherry tomatoes as you can handle (about 4 cups halved)
3 tablespoons olive oil
1 onion, chopped
3 cloves of garlic, minced
1/2 cup fresh basil leaves, torn
1/4 cup Parmesan cheese, grated
Whole wheat thin spaghetti pasta for two (6 oz)

Ingredients

12 ounces fresh mozzarella8 slices soft white bread, crusts removed3 large eggs1/2 cup milkKosher salt and freshly ground black pepper1/2 cup all-purpose flourOlive oil

Directions

Slice the mozzarella and divide among 4 slices of bread. Top with the remaining 4 slices of bread.

Whisk the eggs with the milk in a shallow dish and sprinkle with salt and pepper.

Place the flour in another shallow dish. Dust the sandwiches in the flour and then dip into the egg mixture.

Heat about 3 tablespoons olive oil in a large skillet. Add the sandwiches to the pan and fry on both sides until golden and crisp, about 10 minutes.[...]

Broad beans (also known as fava beans, and in Italian known as fave or baccelli) are actually extremely versatile in the kitchen. Dried or fresh, they’re a staple legume in cultures all over the world
In Italy, other than eating them raw with some bitey Pecorino cheese and prosciutto, on mashed up a bit on a crostino [...]

Broad bean ‘pesto’  is very much a dish that is thrown together with what’s around, not so much a recipe as it is an idea. You could substitute the pistachios for more traditional pine nuts or walnuts. The extra greens that are added to boost the colour are optional, as is the pancetta.
ingredients

Fresh broad beansA few slices of pancetta, chopped (optional)A handful of baby spinach leaves (or tender young broad bean leaves), for colourA handful of pistachiosA handful of Pecorino cheese, gratedExtra virgin olive oil, as neededSpaghetti or linguine (80 grams per person)Directions
