Part abstract: "Negative attitudes toward invertebrates are a deep-seated, visceral response among Western peoples. These internalized aversions toward insects and other terrestrial arthropods, both in general and specifically as a food source, subtly and systemically contribute to unsustainable global foodways. Insect cuisine is, for Westerners, emblematic of the alien, a threat to our psychological and cultural identity."

"L’étude met en évidence une réactivité croisée avec l’extrait protéique de ténébrions. Qui plus est, cette réactivité croisée est fonctionnelle car les tests d’activation des basophiles de ces sujets sont positifs vis-à-vis de l’extrait protéique de ténébrions. La stabilité des allergènes est étudiée dans un modèle de digestion in vitro : ils sont assez stables."

Mais «Green Kow», sa firme, ne peut toujours rien proposer de concret dans les rayons : la législation européenne n’a toujours pas donné les autorisations officielles à cette forme d’alimentation millénaire."

Part: "Although introduction of legal UFS is regulated (yet complicated), the lack of appropriate definitions, intra-European trade harmonization, and of sufficient scientific knowledge hampers a satisfactory evaluation of many UFSs, for example, reptile meat or terrestrial insects. In these cases, official inspection would only be very basic."

Larvae of mealworm (Tenebrio molitor L.) as European novel food

Part Abstract:

The aim of the work was to determine the nutritional value of larvae of mealworm (Tenebrio molitor L.). The material was a three-month-old mealworm larva 25 -30 mmin length. Larvae were boiled for 3 min and next dried in 60℃. Contents of water, ash, minerals, protein, fat and fat acids profile have been determined.

Abstract : "Edible insects are a natural renewable resource of food that could solve the problem of food scarcity. The level of some nutrients and anti-nutrients of two grasshoppers were determined in order to ascertain their suitability as a food and feed source. Spathosternum prasiniferum prasiniferum contained the highest crude protein content of 65.15% while Chrotogonus trachypterus trachypterus had the lowest value of 59.63%. Crude fat and crude fibre content was highest in C. trachypterus trachypterus. Compared with the amino acid profile recommended by FAO/WHO, the grasshopper protein of studies species were of high quality due to its high content of essential amino acids. In fatty acid profile lenolenic acid was the most abundant followed by lenoleic acid. Moisture and energy contents were significantly higher in S. prasiniferum prasiniferum. A higher value of ash content was recorded in S. prasiniferum prasiniferum, corresponding to contain high proportions of sodium, potassium, calcium, phosphorus and magnesium and iron. S. prasiniferum prasiniferum gave higher value for Retinol, Thiamine, Riboflavin and Niacin. The anti-nutrients of the two studied species were generally low and far below the toxic level of human.Both the grasshoppers could serve as an alternative source of nutrient supplements in human diet."

Consommer des insectes n’est pas nouveau. L’idée fait peu à peu son chemin depuis 2001 dans la tête des chercheurs de la faculté Gembloux Agro-Bio Tech. Ils ont lancé une spin-off. On y élève actuellement le ver de farine et le grillon, un élevage expérimental. Ils en proposent dans différentes dégustations, lors de festivals…
