The ancient history of the potato could change the story of civilization
Kenneth Weene's insight:
This is a fascinating piece of anthropological writing. Did what was being farmed affect the complexity of ancient cultures? The tubers, such as potatoes, versus the grains, such as corn: an interesting effect.

Juicing Is Bad for You and the Earth

Juicing Is Bad for You and the Earth | enjoy yourself | Scoop.it
Pulverizing food until all the nutrients have been squeezed out is a dangerous fad. There’s a reason we’ve been cooking what we eat for several thousand years.
Kenneth Weene's insight:

Juicing fruit is particularly bad since you are maximizing your intake of fructose rather than other nutrients. Glad to see that somebody is talking about this issue.

Today’s chefs are using neurogastronomy to change the way your brain perceives flavor.

If you're a foodie, this is a must read. Meanwhile, I so want to go to The Fat Duck. I'll even eat the more rates if Lewis Carrol would allow. Never had imaginary beings before.

Food Giants Announce Major New Labeling Initiative

It will provide instantaneous access to information through smart phones
Kenneth Weene's insight:

The real goal should be an app that will allow us to know the things that are important to us before we purchase food. Sure part of that information can be on the box or package, but we should be able to set our app (smart phone carried app that is) so it will automatically alert us to issues that concern us. So, for example, if there are eggs, the egg allergic would get a beep. The idea of an app to inform is great, but it still requires the consumer spend too much time reading through the label, even is the label is on your iPhone or Android.

Say Hello To The Apple That Never Browns

Say Hello To The Apple That Never Browns | enjoy yourself | Scoop.it
On his tiny family farm, Neal Carter invented an apple he thinks can help improve global health, minimize food waste, and change the agricultural landscape forever. But will anyone actually eat it?
Kenneth Weene's insight:

The real problem to me is that we don't know what our digestive systems have evolved to eat ideally. We also know that the maize from which modern American corn evolved and the various potatoes from which those fries we all eat originally descended were much better for people than their modern off-spring. On the other hand, I do like the idea of food that won't spoil and that can feat millions instead of going to waste. One thing for sure, I don't happily eat those apple slices in their packages. One rule of thumb, if they serve it at MacDonald's, Burger King, or another of those fast food troughs, it probably isn't something i want to eat.

It's amazing what accomplishing something can do for a kid's self-esteem.
Kenneth Weene's insight:

We offer kids far to few opportunities to find the pleasure in nature and even fewer to learn about food in a hands-on manner. What a great story and what an important inspiration Stephen Ritz has offered to teachers everywhere.

New York Restaurant Giant Says No Tips, Please

New York Restaurant Giant Says No Tips, Please | enjoy yourself | Scoop.it
Danny Meyer hopes to make the restaurant industry more equitable for all employees
Kenneth Weene's insight:

I always loved eating at Danny Meyer's restaurants. About tipping, doing away with gratuities and paying staff well is a great idea as long as staff are motivated to provide good service, say by some form of profit sharing. Without that motivating factor, the quality of service will tend to fall without tips. My sad prediction: Without tips or profit share, tThe big spending regulars will get the attention of management and the rest of the customers will be ignored.

And, while were at it, let's get people eating more healthfully. In fact, those two goals go hand in hand since a lot of what goes to waste in this country is vegetables and fruits.

No one food is going to change your life, but a diet rich in these fruits & vegetables will start you on your way
Kenneth Weene's insight:

The only food on this list I don't love is kale. (Sorry kale devotees.) The big point is berries, fruits, and veggies are good for us, and a slice of tomato on your cheeseburger just doesn't do the trick.

Great Leaps Forward In Ice Cream History

Great Leaps Forward In Ice Cream History | enjoy yourself | Scoop.it
It's one of the most complex food products you'll ever consume: a thermodynamic miracle that contains all three states of matter — solid, liquid, and gas — at the same time. And yet no birthday party, beach trip, or Fourth of July celebration is complete without a scoop or two.
Kenneth Weene's insight:

Ice Cream —what better topic for an enjoyable read in August? My all time favorite flavor, coffee with some hot fudge, nuts, and whipped cream if you have. Other choices? Feel free to share them.

We must relearn to eat: Here’s how we teach our kids — and ourselves — to find pleasure in what’s good for us

We must relearn to eat: Here’s how we teach our kids — and ourselves — to find pleasure in what’s good for us | enjoy yourself | Scoop.it
We sneak veggies into kids' meals. We choose from chocolatey and salty variations. But taste is a matter of choice
Kenneth Weene's insight:

I only learned to appreciate vegetables when I was grown and discovered that many could be eaten raw or grilled rather than boiled to mush. Assuredly, what we eat and enjoy around our children helps determine their choices, especially if we avoid the sugar, salt, and fat triad that is such a large part of the "American" diet.

Kenneth Weene's insight:

Let me be simple and direct. The only proof of the existence of god that I even consider is the availability of barbecue in my life. That has to be the kindness of a supreme being or the innovation of one great protohominid. Either way, brisket with a mustard based sauce is heavenly.

Kids consume 12% of their calories from fast food, study shows

Kids consume 12% of their calories from fast food, study shows | enjoy yourself | Scoop.it
Kids now consume 12% of their calories at fast food restaurants, a trend that may contribute to rising rates of childhood obesity.
Kenneth Weene's insight:

When I read this one question kept popping through my head. Why do people think this stuff tastes good? Too much salt, too much sugar, too much fat; I prefer a good salad and fruit; burgers not so much. Have we as a nation taught ourselves to love the wrong tastes? Of course, I'll still go for friend chicken (not from any of the chains) and love greasy tuna from Subway (on a sald not in a sub). Heck, nobody's perfect. So what are your healthy food choices and your guilty pleasures?

NIH researchers put 19 volunteers into metabolic chambers (yes, like the ones used for mice) and put them on two different kinds of diets to see what would happen.
Kenneth Weene's insight:

One is left to wonder what would happen if the subjects were then switched from low fat to low carb and from low carb to low fat. My own research on takeaway is that Chinese is better than Indian because curry often interacts with Styrofoam and never plan on takeaway chocolate in Phoenix during the summer.
