Comfrey is probably not high on your list of desired herbs, but maybe it should be, especially if you are serious about organic practices.
Edible Blue's insight:

This plant is quite pretty, with pink flowers. It dies back in harsh winters but is resilient.

 

Animals and bugs love it, but you can easily pinch off damaged leaves and put them into your compost.

 

The branches are soft, and mine gets to about 3 feet tall before flopping over. I highly recommend getting one!
