Ingredients

 

2 cups all-purpose flour
2 tsp baking powder
1/2 tsp baking soda
3/4 tsp salt
2 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp ground ginger
1 cup granulated sugar
3/4 cup light-brown sugar
1/2 cup vegetable or canola oil
1/2 cup applesauce
2 large eggs
1 1/2 tsp vanilla extract
1/3 cup low-fat Greek yogurt (sour cream would work too)
2 1/2 cups grated zucchini (unpeeled, about 2 1/2 medium)


Cream Cheese Frosting
6 oz cream cheese, softened slightly
6 Tbsp butter, softened
1/2 tsp vanilla extract
1 1/2 cups powdered sugar
