Explain Everything is an iPad app that is used in the classroom by both teachers and students.  This youtube video explains different uses of the app within a classroom.  This clip could have been used in the "iPads in The Classroom" video because it is a powerful tool that can be used to engage the students as well as reinforce collaboration skills.  The technology skills that students gain from using this app will also help them in their future, since many companies are starting to use this app, especially for creating training videos and presentations.
