Behold the incredible edible plastic bag of bliss known to Belizean children across the country as an ideal. This sweet frozen treat is usually made with flavoured, brightly colored snowcone sugar syrups mixed with water and poured into small plastic bags, knotted shut and stuffed in the back of someone's freezer until an overheated schoolkid shows up at their door with a shilling and a quest for something cold, sweet and refreshing. While ideals could easily be made with real fruit juice, I have never seen one.
The great thing about this oxtail soup recipe is that it gets put together very quickly and the simplicity of cooking in one pot, versatile enough to either slow simmer over the stove or chucking it into the oven while woolgathering. It doesn't matter how the vegetables are chopped. Lazily and roughly, however you like it. The result will be rather impressive.

Being tasked with documenting Rachel Graham's shark tagging project at Lighthouse Atoll, Belize for the second year, I wanted to capture a closeup of how the tags look on the shark. Now remember, these sharks are first hooked, then restrained, measured and tagged, all the while struggling and thrashing to be free of lines and hands.
The Duke of Edinburgh's Award Program of Belize released a great video about their Summer Art Camp, which is for youth between the ages of 14 and 17. It starts next Monday, June 8th, and MPR is the base for the camp, so the youths will experience nature in one of Belize's nicest reserves. There are a few spots left.
