IngredientsEggs: ThreeSoy granules: 100 gmOnion: OneTomato: OneCapsicum: OneGinger Paste: ¼ TablespoonCoriander leaves: ¼ tablespoonSalt: to tasteGaram Masala: ½ tablespoonSoy Refined Oil: 4 tablespoonMethod:Soak soy granules in warm water for 15 minutes and squeeze out excess water.Chop the onion, capsicum and tomato fine.Heat two tablespoon oil, add chopped onion, ginger paste, garlic paste and stir till the onion pieces turn golden brown.Add chopped capsicum, tomato, soaked granules, coriander leaves, salt, and garam masala. Stir fry till the granules are cooked.Beat an egg till frothy and add salt to taste. Heat a frying pan, pour two tablespoon oil and pour a beaten egg.Make a nice fluffy omelet. Ingredients:Pearl Millet Flour (Bajra) – 50 gmChana Dal – 50 gmPaneer – 30 gmJaggery – 70 gmFennel seeds – 2 gmMethodSieve bajra flour to remove lumps. Keep it aside.Wash dal and steam cook in enough water till it is tender. Mash it to make a smooth paste.Dissolve jiggery in half cup of water. Boil it with fennel seeds over moderate heat for some time.Make smooth dough of bajra flour, dal paste, and mashed paneer with the help of dissolved hot jaggery water.Roll it into four chapattis and cook till both sides get golden brown with the help of oil.Serve the rotis hot.Nutritive value per serving:Energy – 227.7 kCalProtein – 35.9 gmCHO – 35.9 gmFat – 6.3 gm

Ingredients:Tofu – 250 gmSpinach – ½ kgCumin seeds – ½ tspGarlic, chopped – ½ tspBoiled Onion Paste: ¾ cupTomatoes, chopped: TwoSalt – To TasteFresh cream - Four tablespoonSoy refined oil – For deep fryingGaram masala – ½ tablespoonMethodCut tofu into 1 inch cubes and deep fry in oil slightly. Do not make the cubes crisp. Keep them aside. Remove stems from spinach, clean and wash it. Chop the cleaned spinach and blanch for 2-3 minutes in salted boiling water. Cool and grind it to a fine paste.  Heat two tablespoon oil in a pan, add cumin seeds, chopped garlic and stir till garlic turns golden brown. Add onion paste, chopped tomatoes and cook for three to four minutes Add spinach paste and salt and stir the mixture. Cook till the gravy comes to a boil. Cook on low flame till tofu becomes soft. Chick peas are considered as one of the most nutritious beans for the right reasons. It is rich in folic acid, proteins and dietary iron. Throw in some curd and this tangy salad becomes even richer in calcium and proteins. Mint and coriander increase the content of Vitamin A. Serve it chilled and relish this delicious salad.Ingredients1 cup drained and boiled kabuli chana (white chick peas)½ cup tomato cubes½ cup cucumber cubes1/4 cup chopped spring onion greens and whitesSalt to tasteFor The Mint Dressing1/4 cup chopped mint leaves1/4 cup chopped coriander1/2 tsp sugar2 tbsp low-fat curdsSalt and freshly ground black pepper to tasteMethod For the dressingCombine all the ingredients and blend into a smooth purée in a blender. Refrigerate.For the saladDrain and wash the soaked chick peas. Add fresh water and salt and pressure cook the chick peas for 3 to 4 whistles till they are soft. Cool completely.Combine the boiled chick peas with the remaining ingredients. Add the dressing and mix well. Serve chilled.
