The Dark Side of Fast Food: Why Does It Make You Sick, Fat ,Tired, Taste So Good?

Fast Food Nation: The Dark Side of the All-American Meal (2001) is a book by investigative journalist Eric Schlosser that examines the local and global influence ...
Christine Szalay-Kudra's insight:

If you’re a non conformist don’t watch this video your blood will boil! This is a very good lecture and look at the cultural impact of the Fast Food Industry on the landscape of American and more and more on the world. It looks at what started with a couple of brothers attempt to cut cost in their business and how it has spread too much of society. It is a little chilling and I have to admit more than a bit alarming to think of some of the numbers mentioned throughout the writer’s look at the book he wrote while working for Rolling Stone Magazine. A bit lengthy but very informative and maybe an insight to why your boss is such a ____!

5 reasons Americans are obese — that have nothing to do with food - MarketWatch

5 reasons Americans are obese — that have nothing to do with food - MarketWatch | American Food | Scoop.it

Stress, sleep deprivation and other factors are contributing to Americans’ weight gain.

Christine Szalay-Kudra's insight:

Article explores the continued struggle with weight among American adults and youths. It is interesting to point out this doesn’t all have to do with what we are eating and in fact points to none eating related reason more than just plain food. It also points out that lower income Americans are affected more heavily by the issue than their higher income counterparts and is mainly due to economic pressure for buying healthier more expensive food option. It seems that although we have been trying to wage a war on the American waistline we are not making a significant progress and infect may have slipped slightly backwards.

Hunger Makes You Crave More Than Food - Scientific American

Hunger Makes You Crave More Than Food - Scientific American | American Food | Scoop.it

The desire goes beyond what can be eaten, a study suggests

Christine Szalay-Kudra's insight:

Ok on the strange food study front. In the article attached research shows a correlation between hunger and buying habits it seems when people are hungry they tend to buy more non food items also “so hunger may really affect how we do our shopping.”

Even the least savvy food shopper is familiar with the adage never go shopping for food on an empty stomach – dah everything looks good and I am sure you will agree the grocery bill will go up accordingly. Well it seems this is not limited to just food in the study they look at peoples hunger and interest to buy more of an item and also looked and measured real life shoppers and found a link to the level of hunger and shopping receipts. So if you want to keep the spending within budget make a list and eat before heading to the store your bottom-line may just thank you.

Who Receives 'Food Stamps'? Why It Is Critical To Continue Their Support

Who Receives 'Food Stamps'? Why It Is Critical To Continue Their Support | American Food | Scoop.it

I would venture to bet that all of the more than 47 million people receiving SNAP would rather be "back on their feet." But in a country with more food than anywhere else in the world, it is morally reprehensible to not help those who need it.

Christine Szalay-Kudra's insight:

There is something so WRONG at this time of year, especially having to read what disconnected buffoons our house representatives are. While fools like Donald Trump want to get Mexico to pay for walls, our representatives are cutting basic simple human rights from potentially millions of Americans. Sadly many (a disproportionate amount) are children and they will be affected by this the most. As we try to keep pace with the rest of the world economically and educationally, we are going to send kids to school hungry, and that hardly puts them in the proper frame of mind to learn. Last year I scooped on one of my other scoops about the House spending 2 million dollars on donuts and coffee for themselves, and it seems they are ok with their stomachs being filled but not the most needy of us.

It is time the world, with America’s lead, starts living by a motto of "we all have basic human rights and without this none of us is truly free." These rights must first and foremost be the right to not be hungry, the right to basic healthcare and the right to a basic 14 year free education. There now before you speed-dial Rush Limbaugh, let me state that I am among the most conservative there is but I have seen in my own community the devastation of what I recently touted. These things need to be done or no one working, rich or poor, is truly free. People are ALL important - a child from a poor family that is that way due to health or circumstances, and he or she is possibly that next Noble Prize winner. We can no longer turn our backs on the suffering of any one of us; it weakens all of us if one is forgotten.

A great nation which the rhetoric of politicians has told us we are is only as strong as its weakest link, and if we let one of us down we let all of us down.

So at this time of year I encourage everyone to help - a dollar, an hour, or a comforting hand. If world change is going to come, it comes with one person making one step to help someone they wouldn’t have the day before. Peace and love starts at home with one person. I offer to be the first - are you willing to be the second?

How to make French fries

How to make French fries. The Heston Blumenthal method turns potatoes into outstanding food. It realy makes a difference. It can look like complicated and time ...

Christine Szalay-Kudra's insight:

Today I have a quick and playful look in video form for those of you who prefer their cooking info in that format on how to make fries at home. For our USA audience you’ll need to convert the temps – ok saved you the trouble cook time 1) 266° F cook time 2) 356° F

The important thing is the triple cooking and the freezing in between steps this will yield you fries that are moist and soft inside while nice and crisp on the outside. One thing the video wasn’t totally clear with is make sure you dry the fries before frying. The excess water will leave them limp and soggy so if you like them that way ignore this note but if crisp is what you’re after then use some paper towels to soak up that water.

As a side to those delicious garlic shrimp why not save some garlic for the fries as a side dish? Oh heck why not garlic ice cream – ok maybe I have crossed a line with that one but in my house there isn’t a meat (except bacon) cooked without a bit of that wonderful herb. It is such a great starting point for so many a great recipe that adding it to the fries is - oh heck why not thing.

20 Shocking Vegan Myths Dispelled | American Food | Scoop.it

The most popular vegan myths under the sun debunked and proven otherwise! Don't get fooled again by any of the common stereotypes or false claims.

Christine Szalay-Kudra's insight:

Now before you go screaming at me that what about all those meat recipes on your sites let me say I am excepting of whatever diet or food choice is right for you. I mealy like to point out there are plenty of truths to go around and not anyone answer is right for everyone.

Let’s face it with billions of people on this planet no one diet could fit right for all of us. I mealy found the article interesting and no pun intended food for thought and if you wish to find out more that is up to you. Make the choice that is right for you and I would be the last person to preach any food trend to any of you.

Now just as an idea I don’t know that you have to be one or the other isn’t maybe there room to be a bit of both maybe X days a week you take meat out of your day and others you welcome it in . Life when it comes to food is a balance not an all or nothing in fact denying yourself things you love is the surest way to dietary trouble.

Succulent Seared Scallops Recipe in a Citrus Sauce | AmazingSeafoodRecipes | American Food | Scoop.it

This recipe makes a delicious appetizer, or you could double the quantities and serve it as an entrée with rice or with pan-fried potatoes.

Christine Szalay-Kudra's insight:

These lovely scallops are great to serve as an appetizer because they please the palate without being too filling or rich. The delicate sauce has a really good flavor – a nice combination of sweet and tart. Scallops are not hard to cook although many home cooks avoid them because they are unsure exactly how to cook scallops for a perfect result. It could not be easier. Once your oil is hot, add the scallops and cook them on one side until golden brown, then flip them over and do the other side the same way. They only take a few minutes.

Over 48 Million Americans Can't Afford to Buy Food, 2016 Hunger Report Finds | American Food | Scoop.it

Many health-related problems Americans face are directly related to hunger and malnutrition, according to a new report by the ecumenical Christian anti-poverty group Bread for the World.

Christine Szalay-Kudra's insight:

I can’t harp on this subject enough but “Over 48 Million Americans Can't Afford to Buy Food, 2016 Hunger Report Finds.” In a country of plenty and with so many sharing the riches it is a shame so many unseen face go unnoticed and that hunger is so prevalent. I know this is a food site and normally I focus on what makes it so good but when there is none to go around at all it is impossible to make it anything but bad. I cannot stress enough the importance of helping others with so little we cannot afford to turn our backs on these people they are our future and if we starve a number of our future it will affect all of us eventually. So during the holidays remember no help is too little other than the help not offered.

But seriously (was kind serious - have a seat) I love the holiday and since my MS limits time in the kitchen I will go with Zak’s he really does do a wonderful job. Michelle Obama: The Business Case for Healthier Food Options

Michelle Obama: The Business Case for Healthier Food Options | American Food | Scoop.it

In The Wall Street Journal, First Lady Michelle Obama writes that in recent years, they have generated more than 70% of the growth in sales for packaged-goods companies.

Christine Szalay-Kudra's insight:

The first lady of the US has long been a proponent of healthier kids leads to a healthier future for all of us. It seems that American business is catching on and that it is good business to be concerned about what you are pushing on consumers. Many American businesses seem to of found out that it is just plain good for the bottom-line to be caring parts of the communities they serve. We at RPN think it is only a good idea to take care of the future generation as before we know it they will be taking care of us. My family is all too aware of the heavy price health issues have on the quality of life.

The best steak in the world: What is it about steak that makes people want to ... - The Independent

The best steak in the world: What is it about steak that makes people want to ... - The Independent | American Food | Scoop.it

Of all the meats, only one merits its own class of structure. There is no such place as a lamb house or pork house, but even a small town may have a steakhouse. No one ever celebrated a big sale by saying, “How about chicken?

Christine Szalay-Kudra's insight:

Now living in a house with 5 guys steak is not a food it is a food group. I personal prefer chicken but there is no getting around it my guys love cows. The four legged version preferably grilled and served on a plate with steak sauce (plate is optional, lol). Let’s face it right up there with pizza and chili on a guys food love-o-meter is steak. Let’s face it as the following quote demonstrates “Of all the meats, only one merits its own class of structure. There is no such place as a lamb house or pork house, but even a small town may have a steakhouse.”

When we redid the kitchen a few years back my husband had to have the stove with the built in grill – Why STEAK! I mean is there any cooking method and food that naturally belong together more than steak and grilling, maybe baking and apple pie but no I think not.

Try using fruit with real ocean-spray provenance.
Christine Szalay-Kudra's insight:

When we think thanksgiving foods there are a few that come to mind turkey, stuffing, sweet potatoes and green beans of course but probably the quid essential New England treat is the humble cranberry. This delicious little tart berry is such a wonderful contrast to all the sweet holiday dishes although often buried in sugar itself it still has a lovely tartness that brings a bite of turkey and stuffing alive. No day after sandwich either would be complete without some yummy cranberry sauce nestled in between the bread.

Maryland Crab Cakes with Curry Mayonnaise

Maryland Crab Cakes with Curry Mayonnaise | American Food | Scoop.it

Louisiana remoulade is often served with Maryland crab cakes, shrimp, chicken, or Po' boy sandwiches. It is also nice with fries instead of ketchup.

Christine Szalay-Kudra's insight:

A simple crab cake recipe is ideal if you want a seafood dinner. Perhaps you have enjoyed some delicious crab cakes in a restaurant recently and you are wondering how to recreate your own. I found this recipe very easy to follow and the resulting crab cakes were delicious. I served mine with a green salad but you could offer rice or fries with them if you like, or any side dish you fancy really.

You can use canned or fresh crabmeat, along with the green onions, mayonnaise, lemon juice and other ingredients. All you need to do is combine the ingredients and press the mixture into patties, before frying them in a skillet until crispy on the outside and hot all the way through.

Just imagine how wonderful these smell while they are cooking and they are versatile too, if you want to swap the crab for tuna or salmon, or spice them up with some tabasco sauce. Try this simple crab cake recipe. You will love it, and it makes a great change from chicken or beef.
