Getting Our Kids to Eat Their Veggies

Getting Our Kids to Eat Their Veggies | Wai Lana's Kitchen | Scoop.it
It is a challenge that every parent faces: How to encourage our kids to eat more vegetables. Most health-conscious parents know that there is no substitute for salads, raw veggies, and cooked vegetables and greens. Vegetables are the most nutrient-dense of all foods, containing vital minerals, antioxidants, amino acids, and other nutrients that promote good health better than any supplement we could take. But how can we convince our kids to eat them?

Gluten-Free Snacks & Food - Wai Lana™ Fruit & Nut Bar

Gluten-Free Snacks & Food - Wai Lana™ Fruit & Nut Bar | Wai Lana's Kitchen | Scoop.it
Wai Lana's insight:

Most kids love fruits and nuts as a snack. I know mine did. They also loved snack bars. I used to shop for the best snack bars at the store, but so often they were full of sugar, artificial ingredients, and didn’t taste very fresh. So I learned to make them myself instead. For many years, when I was bringing up my three kids, I’d make them homemade fruit and nut snack bars, and they never got tired of them.

In fact, they became quite popular, not just with my own kids, but with their friends too. I never had enough bars because my kids were always sharing with their friends. And because they were so yummy, it seemed like they kept having more and more friends!
When my kids grew up, they continued the tradition of making my fruit and nut snack bars for their own kids.

So the word spread and many of their friends’ mothers began asking for the recipe. I’m not one to keep helpful tips to myself, so I decided to produce the bars so everyone can enjoy this all-natural, delicious snack without having to take the time to make it themselves.

I hope you enjoy my Wai Lana Bars as much as my family and friends do!

Wishing you well,
Wai Lana

Cassava chips: Healthy, Low fat & Gluten-free

Wai Lana's insight:

While the Cassava root may be considered exotic in the West, for centuries it has served as an important food source for indigenous peoples of the ancient world. Many ethnic cultures still eat the cassava root routinely.

This tropical, starchy root vegetable is also known as tapioca, yucca and manioc, depending upon the region where it is cultivated and eaten.

Despite its long history, the cassava root has only recently made its way into the fast-paced world of the snack food industry and makes for some delicious, healthy and natural chips that are tasty enough to lure even the most die-hard potato chip consumer.

Roasted Vegetable Pie

Roasted Vegetable Pie | Wai Lana's Kitchen | Scoop.it

Try this rich and flavorful recipe by Wai Lana - Roasted Vegetable Pie

Wai Lana's insight:

Roasting vegetables really seems to concentrate and enhance their natural flavors. Red bell peppers, tomatoes, and onions always seem to taste much sweeter when roasted, the flavor of mushrooms seems much deeper, and zucchini, which can often be somewhat tasteless, seems to have a richer flavor than usual.

Try varying the vegetables in this pie according to what's fresh and abundant, and try adding other ingredients such as olives and artichoke hearts if you like. If you're pressed for time, you can prepare the pie crust and cream filling ahead of time and store in sealed containers in the refrigerator.
