Last weekend's trip to Pebble Beach Food & Wine event got me thinking about how chefs create recipes and what inspires them to move in new directions.

When I make up my own recipes they are usually based on classic recipes which I have tweaked. For example I have a tuna pasta bake recipe I make a lot but last week we were out of tuna. We did have a can of salmon though so I simply subbed the salmon for the tuna, changed the corn for spinach and a brand new recipe was born in our house. But all new recipes need to come from somewhere, so how do professional chefs invent recipes from scratch?

 

Obviously they already know which ingredients are likely to work together as well as cooking times and other cooking information, but where do their ideas come from in the first place? Is it like an artist deciding what kind of landscape to paint or a singer deciding what to write her next song about?
